I vividly remember standing outside the door of my apartment in college watching many of my neighbors pack up their cars to head home for summer break. The students who had their shit together embarked internships. The kids who were lucky and had their parent's cash traveled to warm, exotic places. I was gearing up for a summer of double shifts and summer classes. My funds were depleted, my credit card was maxed, I dropped 6 hours the semester before so it was time to play catch up. Honestly, the only item I had to show from my disgustingly high Visa bill was a weird round wicker chair from Pier One Imports (nobody sat on it by the way). The rest was spent on beer, cigarettes and pizza rolls.

I am 36 now and it seems the situation is sadly still the same. I am still in debt from booze and tobacco...I haven't started marketing Pizza Rolls yet. The jam packed Honda Civic loaded down with booze and trash bags of dirty clothes have been replaced with a minivan loaded down with luggage and beach toys. I know that someday I will make the pilgrimage to Disney. Why wouldn't I drop a couple grand so my daughter can whine that she would rather be at the pool while we walk twenty miles in ninety degree heat through the "enchanted" kingdom? I know that in the future I will travel to water parks, mini golf courses, and crowded beaches in the Carolinas. I know that my husband will finally talk me into a cruise where I will fear that I will never come back, turning into an expose on Dateline..."she went snorkeling and just disappeared". 

I know, I know, I sound angry and jealous. You're right. I am! Traveling is wonderful; when you get the opportunity, no matter what age, do it! Unfortunately sometimes traveling and vacations don't happen. Don't beat yourself up! There is a way to bury your summer vacation envy, it's called Rum. Rum can be enjoyed in any zip code! Rum is inexpensive and mixes well with everything. Rum can be your best "stay-cation" buddy. So grab a bottle of rum, my land-locked RollnUp-ers and find a lake, pond, or an above ground pool (if you have an in-ground pool, your ass is on vacation). Here are some of my favorite Rum Recipes. Enjoy!

Think Tom Cruise in Cocktail
The Classic daquiri, no blender required. When you hear daiquiri, you think strawberry and frozen. A true blue daquiri is quite simple, yet deeeeelicious! You can throw it in a blender if you desire and add whatever fruit or flavor you crave, but the recipe below is the foundation.
The Classic Daiquiri
1 1/2 oz of Light Rum - Bacardi Light Rum is the #1 Selling Rum
3/4 oz. Lime Juice
1/4 oz. Simple Syrup*
-Pour all ingredients into an ice filled cocktail shaker
-Shake it baby!
-Strain into martini glass and garnish with a lime...or pour it over ice in a red solo cup.
*Simple Syrup Recipe: 2 Parts Sugar, 1 Part Water: Bring water to a boil & whisk in sugar until it dissolves. Remove from heat, let it cool. If this is too much work you can buy "Bar Syrup" which is the same damn thing!

I was introduced to the mojito years ago and it's my favorite "fancy" drink to this day. The mix of mint and club soda make this cocktail super refreshing! I am a classic mojito person myself, but when I make them it seems the consensus enjoys added flavors.
Berry Mojito
1 1/2 oz. DragonBerry Bacardi Rum
1 oz. DeKuyper Razzmatazz (Raspberry Liqueur)
12 Mint Sprigs
1 oz. Lime Juice
1/2 oz. Simple Syrup
Frozen Mixed Berries
Splash of Club Soda
-Muddle mint and lime juice with a wooden spoon
-Add rum, raz liqueur, simple syrup & soda
-Use frozen berries as ice cubes (You can buy frozen mixed berries in your grocer's freezer)
-Straws are handy when drinking this cocktail...but if you don't have any, check your teeth before taking any selfies!

Party Like a Pirate
The recipe calls for you to drink it out of a 16 oz. bottle which pretty much advertises that you mean business. If you do decide to embark on flammable rum, make sure you bury your car keys and put a life jacket on accompanied by a Hawaiin shirt. Call your loved ones and let them know if they don't hear from you in 24 hours to call local authorities. Be safe and enjoy!
Captain Jack Sparrow
1 1/2 oz. Bacardi 151 Rum
2 oz. Captain Morgan Original Spiced Rum
2 oz. Southern Comfort Peach Liqueur
9 oz. Pineapple Juice
-Empty a 16 oz. bottle and add 6 ice cubes to it
-Add the Bacardi 151 Rum, Captain Morgan Original Spiced Rum, Southern Comfort and pineapple juice
-Leave enough room at the top for the foam when you shake it up. Shake until ice cubes are pretty much melted and serve. May be served on ice if desired.
